Simply defined a chop is the cut of meat which is cut perpendicularly to the spine. In most cases it does contain a rib or riblet part of the vertebra and is served as an individual portion. We’re familiar with pork and lamb chops, but did you know although the term chop is rarely associated with beef, a T-bone steak is essentially a loin chop, and a rib steak a rib chop?
Oh, and about that dessert…don’t chop it out.
